Sushi Wakon Tokyo is the second branch restaurant of chef Rei Masuda, and serves the same extraordinary menu that earned him two Michelin stars for Sushi Masuda, which opened in 2014. For his mastery over creating superb sushi experiences that are founded on traditional skills, but with a focus on innovation and progressive principles, Masuda is widely viewed as key figure among the next generation of prominent Japanese chefs.
His career began at the age of 17 in Fukuoka, where Masuda worked as a sushi chef before attending culinary school and working at a Japanese traditional kaiseki restaurant. He then moved to Tokyo, where for a formative nine years he was a star apprentice of legendary sushi chef Jiro Ono.
Having learned so much himself from one of Japan’s all-time great chefs, one of chef Masuda’s great passions is raising the next generation of sushi chefs. Cultivating these relationships has culminated in the opening of both branches of Sushi Wakon, first in Kyoto in 2016, and here in Tokyo in 2019. Next, Masuda is planning his first overseas expansion, with a third branch of Sushi Wakon scheduled to open in Macau.
